Easy Shrimp Fried Rice

Hey there,

Okay, I know this isn’t a Greek recipe, but what can I say? I’m a food lover through and through, and sometimes my kitchen takes a little trip around the world. This Easy Shrimp Fried Rice is one of those delicious eats.

Now and then, even a Greek home cook wants/craves something with a little soy sauce or oyster sauce and sesame oil. I love Greek flavors, but I also love how food connects us globally. One bite of this shrimp fried rice, and suddenly I’m not in my kitchen, I’m in a bustling street market somewhere in Asia, where the air smells like sizzling garlic and fresh ginger. Oh my! I’ve never been to Asia, but I definitely have two countries in mind.  Hopefully, maybe next year

This recipe is one of those lifesavers you’ll turn to again and again. A few shrimp, I used frozen shrimp for this recipe, some veggies, an egg or two, and dinner is done.  Plus, there’s minimal cleanup, which means more time for some quality time, like taking a walk, I’m just saying.  I always boil the frozen shrimp before cooking them, but you don’t have to.

You can easily swap out the shrimp for chicken, ginger (not the case now), or just load it up with frozen extra veggies if you’re keeping it meat-free. It’s one of those easy recipes that works with whatever you already have in your kitchen.  Now, I don’t own a wok. I just use a large, deep frying pan, and it works fine! I’ve thought about buying a wok a few times, but honestly, I know it would probably end up collecting dust somewhere in the back of a cabinet. So, frying pan it is… and it gets the job done.

The same goes for the rice. Feel free to use whatever you have on hand. Maybe you prefer Basmati instead of the short-grain white rice I used. Go for it! Cooking should be about what you enjoy eating, not following rules to the letter. Half the fun is tweaking recipes and making them your own. Boil the rice the day before, it’s just quicker.

Soooo, about the sauce… I realized that I was completely out of soy sauce (classic me 😅). The only thing I could find hiding in my fridge was a bottle of oyster sauce. After a quick bit of research thank you, internet I discovered that plenty of fried rice recipes use oyster sauce instead of soy. That little discovery made my day… and honestly, the flavor turned out amazing!

So yes, it may not be Greek, but it’s easy and so flavorful. Because sometimes, the best recipes are the ones that remind us how big (and delicious!) the world of food really is.

Easy Shrimp Fried Rice

This Easy Shrimp Fried Rice recipe is the kind of dish that is quick, flavorful. You can toss in whatever veggies you’ve got on hand, and it still turns out delicious. Whether it’s a weeknight dinner or a “clean out the fridge” kind of day, this recipe has your back.

Ingredients
  

  • 3 ½ cup rice boiled
  • 3 cup vegetables fresh or frozen (defrost before cooking)
  • 2 onions finely chopped
  • 2 spring onions finely chopped
  • 1 ½ cups shrimps fresh or frozen boiled
  • pepper
  • salt optional
  • 4 tbsp oyster sauce or four tbsp of soy sauce
  • 2 tbsp butter
  • 3 eggs whisked

Instructions
 

  • In a medium-sized pot, boil the shrimp just until they’re tender. There is no need to fully cook them yet. Drain and set aside.
  • Add a tablespoon of butter into the frying pan or wok, add in the chopped onions and spring onions, and stir. Season with a bit of salt and pepper.
  • Add the rice to the pan and give it a good stir until each grain is lightly coated with that butter.
  • Add in the second tablespoon of butter and the shrimps, stir, and then toss in the fresh or frozen vegetables.
  • Keep everything in the same pan for this step. Gently push the rice and veggies to one side, then pour in the whisked eggs. Let them cook until they start to look like a soft omelette, then slowly fold them into the rice mixture.
  • Pour in the oyster sauce and combine. If you need to add extra, go ahead and do so.
  • Serve in your favorite bowl with your favorite chopsticks.
