Easy Shrimp Fried Rice

This Easy Shrimp Fried Rice recipe is the kind of dish that is quick, flavorful. You can toss in whatever veggies you’ve got on hand, and it still turns out delicious. Whether it’s a weeknight dinner or a “clean out the fridge” kind of day, this recipe has your back.

Ingredients
  

  • 3 ½ cup rice boiled
  • 3 cup vegetables fresh or frozen (defrost before cooking)
  • 2 onions finely chopped
  • 2 spring onions finely chopped
  • 1 ½ cups shrimps fresh or frozen boiled
  • pepper
  • salt optional
  • 4 tbsp oyster sauce or four tbsp of soy sauce
  • 2 tbsp butter
  • 3 eggs whisked

Instructions
 

  • In a medium-sized pot, boil the shrimp just until they’re tender. There is no need to fully cook them yet. Drain and set aside.
  • Add a tablespoon of butter into the frying pan or wok, add in the chopped onions and spring onions, and stir. Season with a bit of salt and pepper.
  • Add the rice to the pan and give it a good stir until each grain is lightly coated with that butter.
  • Add in the second tablespoon of butter and the shrimps, stir, and then toss in the fresh or frozen vegetables.
  • Keep everything in the same pan for this step. Gently push the rice and veggies to one side, then pour in the whisked eggs. Let them cook until they start to look like a soft omelette, then slowly fold them into the rice mixture.
  • Pour in the oyster sauce and combine. If you need to add extra, go ahead and do so.
  • Serve in your favorite bowl with your favorite chopsticks.
