This Frittata recipe saved me these past months. Let me correct that Paella and Frittata were the most cooked dishes while we were waiting for our kitchen. If I remember correctly the last time I prepared Paella was in July. (I mean wow that was a whole lot of seafood and rice). But Frittata on the other hand is a completely different story. It’s a simple and versatile recipe made with ingredients. that I had in the fridge vegetables and various kinds of cheese. For this Frittata recipe, I used goat cheese in the filling a bit of grated greek smoked cheese, which enhanced the taste, and parmesan cheese for that slight saltiness.
Now, you might be wondering what is a Frittata. A Frittata is an egg bake with veggies. Some same frittata and Quiche are similar. I don’t see it, so here’s what I know to prepare a Quiche you need a pie crust. To prepare a frittata you need a skillet. Of course, the ingredients may be slightly similar but in a quiche, you need to add some kind of cream for stability. Where actually do we add cream to a Frittata?
We always drive to Greece and so on our way back at the end of September we stopped off at a small town which is nestled in the Pindos mountains called Metsovo. If you’ve never heard of this town you can google it. It’s a beautiful town with views that are just breathtaking and this town is well known for its cheeses and the unique way they grill meat. I bought Mestovitiko Smoked Cheese and Greek Parmesan cheese. Yep, your read it correctly they make Parmesan Cheese and I have to admit it is quite good. 🙂

Easy Frittata Brunch Recipe
Ingredients
- 1 leek chopped
- 2 fresh spring onions chopped
- 1 red pepper chopped
- ½ cup peas
- ¼ cup olive oil
- dill small batch
- 6 eggs large
- ½ cup parmesan cheese grated
- ¼ cup smoked cheese (optional) grated
- ½ cup goat cheese
- salt
- pepper
- ½ tbsp sweet paprika
Instructions
- Start by preheating the oven to 180c or 375f. In a large bowl whisk the eggs, parmesan cheese, salt, pepper, and sweet paprika.
- Saute the vegetables in a skillet. Add in dill. Stir for a few more minutes
- Add the sliced goat cheese.
- Top with egg mixture and place into the oven for 20 minutes.
- Serve hot
