Strawberry Vanilla Pudding Cake

Hey there, my foodie friends,

Strawberry season is officially here!!! Strawberry Vanilla Pudding Cake. Have you ever heard of this little dessert before? I’ve made a similar recipe like this one before, and I was so happy to find this recipe in the same magazine, Gastronomos. And so if you haven’t, oh, you’re in for something seriously sweet and delicious.

Strawberry season means one thing: scrumptious treats. I went to the market the other day and found gorgeous, plump strawberries. Now, I always carry a bottle of water in my bag,  so I found a sunny bench, gave a few strawberries a rinse, and… well, let’s just say I didn’t wait till I got home. They were suuuper sweet, juicy, and totally for this strawberry dessert. It was one of those lovely spring days when the sun’s out just enough to make you forget any worries. Honestly, I’ve been lucky this season; every batch I’ve bought so far has been great!. You know how it goes… sometimes you bite into one strawberry, all excited, and it’s like, wait, nahhh.  Dry, sour, and disappointing, right?

What I loved about this recipe is the little twist! Normally, I go the Greek route and use leftover tsoureki, that sweet, fluffy bread Greeks usually eat during Easter.  But this time, this recipe called for croissants.  I had some buttery croissants in my pantry. Wow, what a delicious switch-up!  It’s super simple, seriously, no fancy skills are needed. So, listen up: this is what you need to do. First, grab a few buttery croissants, cut them into small pieces, and scatter/layer them around the baking pan.

Then I whipped up a simple vanilla pudding mixture, poured it over the croissants and strawberries, and let everything soak up that sweet, creamy goodness.   The top turned golden and slightly crispy, while the inside stayed soft and custardy.  A dessert made for strawberry lovers, this Strawberry Vanilla Pudding Cake will hit the sweet spot. It’s juicy, creamy, soft, and just one bite will have you going mmmm, more please.

Strawberry Vanilla Pudding Cake

Equipment

  • 1 bowl
  • 1 Baking pan
  • 1 whisk large

Ingredients
  

  • 15 strawberries fresh cut in half
  • 12 croissants Cut into small pieces
  • 3 eggs small
  • 1 ½ tsp vanilla extract
  • 1 ½ cup cream cheese
  • ½ cup sugar
  • 1 ½ cups milk
  • confectioner sugar optional

Instructions
 

  • Preheat the oven to 180℃/350℉
  • Wash and dry the strawberries thoroughly, then slice them in half
  • Cut the croissants into bite-size pieces and layer them evenly to cover the entire bottom of your baking pan
  • In a large bowl, add the milk, cream cheese, vanilla extract, eggs, and sugar. Whisk everything together until you get a smooth, slightly thickened cream
  • Scatter the strawberries evenly over the croissant pieces, making sure every bite gets a little berry.
  • Then pour the egg mixture all over gently and slowly, so it soaks into all the layers. It should cover the croissants completely. Let it sit for a few minutes to absorb before baking.
  • Bake at 180°C (350°F) for about 30 minutes, or until the top is golden and crispy.
  • Set aside to cool off completely. Once it’s cooled, give it a generous dusting of confectioner’s sugar and serve.

    Wow, I would not have thought croissants for this recipe! I haven’t had one in ages, but I used to love them.

    • Cazzzzzz, I sometimes have difficulties commenting on post. I kind of gave up. This started a few months ago, and so I understand not being able to comment.

      It was a delicious surprise and so simple to make. We all enjoyed it!!
