Soft Pistachio Cookies

Hey there friends,

Autumn is just around the bend, and baking cookies will be the thing to do.  There’s something special about a cookie. They’re simple, yet have the magical ability to improve your day instantly. These soft Pistachio Cookies are made with pistachios from the Greek island of Aegina.

If you’ve never heard of Aegina, let me paint a picture for you. It’s a small island just a short ferry ride from Piraeus (Athens), famous for its crystal-clear waters, charming little harbors, and it’s famous worldwide for its pistachios. These aren’t your ordinary pistachios, oh no. Aegina pistachios are considered some of the best in the world. They have this beautiful balance: nutty, buttery, slightly sweet, with an intense flavor and color.

Every September, Aegina celebrates with a Pistachio Festival (yes, a whole festival for pistachios). Greece knows how to honor its food. This year it takes place on September 18th. Stalls line the harbor selling pistachios in every form you can imagine: roasted, candied, and even turned into ice cream. If you ever happen to be at the festival, bring an extra suitcase. Trust me, you’ll need it.

Now, back to the cookies. These pistachio cookies are buttery, slightly crisp at the edges, and filled with chopped Aegina pistachios that add that irresistible crunch. They’re the kind of cookies that don’t last very long once they hit the cooling rack. One minute they’re cooling, the next minute, poof, gone. In my case, I would like to blame my puppies, but really, it was all me!  I ate all six cookies, friends. None left to shoot. :(. I will make another batch soon and post a photo.

These cookies pair beautifully with a cup of Greek coffee in the afternoon, or with a tall glass of cold milk. Baking these cookies always makes me feel like I’m back in Greece. The moment you open a bag of Aegina pistachios and the smell of that earthy, nutty aroma, ahhhhhhh, food can do that to you. Take you places without ever leaving your kitchen. These cookies are a little taste of Greece that you can bring into your own kitchen.

Soft Pistachio Cookies

A delicious Greek cookie made with pistachio nuts from the Greek island of Aegina in Greece. Crunchy around the edges and soft in the middle.
Prep Time 10 minutes
Cook Time 20 minutes

Servings 6 pieces

Ingredients
  

  • 200 grams Pistachio nuts crushed
  • 1 egg white
  • 2 ½ tbsp honey

Instructions
 

  • Combine all the ingredients in a mixer until the ingredients turn into dough.
  • Shape the cookie dough into 6 medium-sized cookies.
  • Line a baking pan with a sheet of parchment paper, and place the cookies.
  • Bake at 180℃ until crispy around the edges and soft
