Hello,
I turned my homemade bread dough into mini rolls instead of a traditional loaf. Since I had some leftover spanakotyropitakia filling, I used it as a stuffing to create these Mini Spanakotyropitakia Bites snack. I know that it’s not the traditional Greek spinach pie with dough, but the ingredients in the filling are the same. I had already made a spinach pie with some leftover filling, so I decided to get creative. On a whim, I used it to fill some mini bread rolls, which turned out to be a delicious mini treat! Sometimes, the best ideas come from improvisation, don’t you think so? Isn’t that what cooking is all about? After all, isn’t cooking about creativity, experimenting, and discovering new flavors?
Ok, so here’s what happened: I made my bread dough and let it rise overnight. I hadn’t planned on making mini bread rolls, but I was feeling creative and decided to go for it. The Spanakotyropitakia filling recipe is already posted in my Spanakotyropita recipe, but if you don’t feel like searching for it, don’t worry about it. I’ll include the ingredients in the recipe card below. As for the herbs, I used dill and dry mint. If you don’t have dry mint, fresh mint works as well! The homemade bread recipe is also posted on my blog, but I’ll include the link for that recipe below. But if you’re not in the mood to bake bread, you can always use store-bought mini rolls.
The baked rolls, filled with a cheesy herb and spinach mixture, turned out to be a delicious treat! What makes this recipe so special? Not wrapped in dough or baked. What more could you ask for in a mini snack?

Mini Spanakotyropitakia Bites
Equipment
- 1 sauté pan
- 1 wooden spoon
- 1 knife
Ingredients
- 2 cups spinach fresh or frozen
- 5 fresh onions chopped
- ⅓ cup feta cheese crumbled
- dill handfull finely chopped
- 1 ½ tbsp dry mint
- 2 tbsp vegetable oil or olive oil (optional(
- 10 mini bread rolls
- salt
- pepper
Instructions
- On low heat, place a large sauté pan. Pour in the vegetable oil, add the chopped fresh onions, and stir gently until they soften.
- Toss in the spinach and stir gently until it has wilted.
- Add in half of the finely chopped dill and dried mint, and continue stirring gently until everything is well combined.
- Remove the pan from the heat and set aside to cool.
- Once the filling has cooled, add the remaining dill, crumbled feta cheese, salt, and pepper. Stir everything together with a wooden spoon until well combined. Then, slice open each mini roll and use a fork to fill it with the mixture.
- Serve hot or cold.
