Mini Spanakotyropitakia Bites

Mini baked rolls filled with the traditional spanakotyropita feta cheese, herb, and spinach filling.

- 2 cups spinach fresh or frozen
- 5 fresh onions chopped
- ⅓ cup feta cheese crumbled
- dill handfull finely chopped
- 1 ½ tbsp dry mint
- 2 tbsp vegetable oil or olive oil (optional(
- 10 mini bread rolls
- salt
- pepper
On low heat, place a large sauté pan. Pour in the vegetable oil, add the chopped fresh onions, and stir gently until they soften.
Toss in the spinach and stir gently until it has wilted.
Add in half of the finely chopped dill and dried mint, and continue stirring gently until everything is well combined.
Remove the pan from the heat and set aside to cool.
Once the filling has cooled, add the remaining dill, crumbled feta cheese, salt, and pepper. Stir everything together with a wooden spoon until well combined. Then, slice open each mini roll and use a fork to fill it with the mixture.
Serve hot or cold.
