Hello,
How is everyone? I had no idea these were even a thing! Did you? In case you didn’t either, I’m here to let you in on it. I was watching a Greek pastry chef’s show the other day when he whipped up these adorable little energy balls. And, well, you know me, I had all the ingredients sitting right there in my pantry, so of course, I had to give them a try. For me, though, it was all about the peanut butter (not the cocoa… sorry, cocoa, you lost this round hehehhe). These Honey Peanut Butter Bites are no-bake, no-fuss, and 100% delicious.
A go-to treat when you need something quick, sweet, and just the right kind of energizing. You mix, roll, and chill! While making them, I stared into the bowl, wondering how on earth the peanut butter and honey were sticking to everything in sight. I do that sometimes, and now I was wondering how I managed to get peanut butter and honey on myself is truly remarkable. hehehe I was debating hands or gloves? Gloves, of course, so I advise anyone out there who might try this recipe to use gloves. Once they were ready, I plated them on a platter and straight into the fridge. I keep mine in the fridge, in a glass container, so they keep fresh.
Now, you can add whatever you like: chocolate chips, coconut, chia seeds, or even a sprinkle of cinnamon. The ones in this post were made with cocoa powder; the other batch I made for me were rolled in coconut. For a little extra chocolate on these bites, I drizzled a little chocolate ganache on them.
These Honey Peanut Butter Bites may look small, but they’re mighty. Believe me, even the ones that were rolled in coconut gave me a boost! 🙂
Have a wonderful morning/afternoon/evening and weekend, everyone!
