What could be more delicious to eat on a hot summer day? Salad of course! I love all sorts of salads with different Oil bases and or any home made dressing. This is a very simple, green, light, and healthy salad based in Olive Oil and Lemon.
Coming from a Greek background, I don’t remember my mother ever not using Olive Oil, and so the tradition continued with me. I use Olive Oil in all my salads and in my recipes, because I love the taste, texture, and the fact is the benefits of eating Olive Oil are just countless. 🙂

GREEN SALAD WITH LEMON VINAIGRETTE
Ingredients
- 1 Lettuce
- 1 cup Spinach Leaves
- 3 Fresh Spring Onion chopped
- 1/2 cup Dill chopped
- 1/2 Cucumber sliced
- Capers optional
- Croutons optional
- Feta optional
- Lemon Vinaigrette:
- 5 tablespoons Olive Oil
- 1/2 Lemon juice
- 1/2 teaspoon Lemon zest grated
- 1 teaspoon Sugar
- 1/2 teaspoon mustard
- Salt
- Pepper
Instructions
- Wash all your greens and let drain. In the mean time in a small bowl add all the ingredients for the Vinaigrette and whisk. Once the greens have completely drained add into a bowl along with the Capers, Croutons, Feta if you wish, (others enjoy adding Feta into this salad and others don’t, it really is up to what you enjoy eating with your green salad), slowly drizzle the Lemon Vinaigrette and toss.
