Greek Style Paella

So, let’s talk about paella. That scrumptious Spanish dish that arrives at the table in a massive pan, filled to the top with rice, seafood, and so much flavor. Every time I’ve seen one, I’ve thought, Yes, I could definitely eat that all by myself.”  But here’s the twist: what happens when a Greek cook gets their hands on paella? Well, let’s just say… Spain meets Greece, and suddenly the rice is flirting with olives and olive oil and its Greek Style Paella.

The first time I tried Paella was in Spain, in Barcelona and Madrid, many, many years ago.  I tried both variations with and without meat.  My favorite, hands down, was the Seafood Paella, and I wasn’t a vegetarian in those days.  There are many variations to the dish, just with seafood, others are with meat and seafood, so many that you eventually lose count.  Back then, I also bought a small Paella pan so that I could make it when I would return to Greece.  I was living in Greece at the time.  I loved it because the two handles were red.

When I first made this, I wasn’t entirely sure how it would turn out. This time, I skipped the cheese and went with a mix of green and black olives to give the paella a proper Greek twist. I’ll admit, I added way more green than black. But you’d never know it from the photo. Why? Because I accidentally shot the picture of the version without the olives!  (I know you are probably thinking right about now, what is wrong with that woman?). I’ve no vacation this year, I am going from one job to another with no breaks.  What do you expect? 🙂

I had set aside a plate for my neighbor/friend without olives, we ate the olive-packed version, and somewhere along the way, I realized the wrong dish ended up in front of the camera. What can I say? I’m only human… a foodie who makes the occasional boo-boo. But trust me, olives or no olives in the photo, this dish has all the Greek flavor you’re looking for!  I added the olives at the end and gently stirred them into the dish.

The shrimps I added to this Greek Style Paella are the ones I posted the other day.  A delicious twist to a delicious dish.

Greek Style Paella

This Greek Style Paella Mediterranean twist on paella, made with Greek flavors like olives, herbs, and olive oil for a fresh, vibrant dish.

Ingredients
  

  • 10 shrimps air fryer
  • 1 onion small finely chopped
  • 1 green red bell pepper finely chopped
  • 1 red bell pepper finely chopped
  • 4 tbsp olive oil
  • ½ cup peas frozen
  • 1 ½ cups arborio rice
  • 2 tbsp oregano
  • 1 ½ tbsp dill optional
  • ½ cup black pitted olives
  • ½ cup green pitted olives
  • ½ cup dry white wine
  • 2 cup vegetable broth
  • 5 cherry tomatoes finely chopped (optional)
  • salt
  • pepper
  • 1 bay leaf

Instructions
 

  • Sauté the onion, green and red peppers, peas, and cherry tomatoes in olive oil.
  • Slowly stir in the rice.
  • Season with salt and pepper. Slowly pour in the white wine, vegetable broth and bay leaf. Wait a few minutes before you start to stir. Let this simmer.
  • Once the rice has absorbed the wine and broth, add the air-fried shrimps and olives. Stir and season with salt and pepper.
  • Sprinkle in the oregano and the dill. Let the Paella sit for a few minutes before serving.
