I was craving something with coconut in it. I was tired of the syrupy traditional Greek cakes and cookies that we had over the holidays. As I was searching for something in my pantry, I found coconut flakes. I had some coconut flakes leftover from some cookies I had made a while back. (Yes, I know I didn’t post the recipe) And so this was my opportunity to make this Easy Moist Coconut Cake. :). This cake is soft, fragrant, and not overly sweet. It’s tender, buttery, lightly coconutty, and incredibly moist, the kind of cake that stays just as good the next day (if it lasts that long). Coconut has a way of doing that. It brings warmth without being heavy, sweetness without being overpowering. It’s cozy, familiar, and a little nostalgic. Every time I bake with coconut, it reminds me that simple ingredients can still create something really special.
This cake is definitely not complicated to make at all. There is absolutely no fuss. Just pop everything into one bowl, and basically that’s it. You mix, you bake, you wait… and suddenly, you have a cake. This coconut cake works beautifully on its own, dusted lightly with powdered sugar, but I wanted more coconut, and so I actually topped the cake with more coconut flakes. That was the whole point: I wanted as much coconut in and on the cake as possible. It’s perfect for afternoon snacking, casual gatherings, or those quiet moments when you just need something homemade.
I would say that if comfort had a flavor, it would taste like this coconut cake. Simple, cozy, and dangerously easy to love, this easy, moist coconut cake can actually become one of your recipes. Let me know if you try it out. 🙂

Easy Moist Coconut Cake
Ingredients
- 1 ⅔ cups self- rising flour
- 1 cup butter room temperature
- 1 cup brown sugar
- 4 eggs medium size
- 1 cup coconut flakes
- 1 tsp baking powder
- ¼ cup milk
- Coconut topping
- 1 ⅓ cup powder sugar
- ¾ cup coconut flakes
- 4 tbsp water
Instructions
- Preheat oven to 180℃.
- Combine the 1 cup butter, 1 ⅔ cups self- rising flour, 1 cup brown sugar, 4 eggs, 1 cup coconut flakes, 1 tsp baking powder, and ¼ cup milk. Mix until you have a smooth batter.
- Brush the baking pan with a little butter, and then transfer the cake batter into a 25cm baking pan.
- Bake for 40 minutes or until golden brown.
- In the meantime, prepare the coconut topping. Combine the 1 ⅓ cup powder sugar. 4 tbsp water.
- Once the cake is ready, set it aside to completely cool.
- Pour the syrup over the top of the cake and around the cake.
- Sprinkle the ¾ cup coconut flakes, over and around the cake so that the coconut flakes stick.
- Serve with a scoop of your favorite ice cream.
