Easy Moist Coconut Cake

This moist coconut cake is simple, comforting, and irresistibly soft. Made with just the right amount of coconut. Perfect for everyday baking, afternoon coffee, or whenever you’re craving something cozy and homemade.

- 1 ⅔ cups self- rising flour
- 1 cup butter room temperature
- 1 cup brown sugar
- 4 eggs medium size
- 1 cup coconut flakes
- 1 tsp baking powder
- ¼ cup milk
- Coconut topping
- 1 ⅓ cup powder sugar
- ¾ cup coconut flakes
- 4 tbsp water
Preheat oven to 180℃.
Combine the 1 cup butter, 1 ⅔ cups self- rising flour, 1 cup brown sugar, 4 eggs, 1 cup coconut flakes, 1 tsp baking powder, and ¼ cup milk. Mix until you have a smooth batter.
Brush the baking pan with a little butter, and then transfer the cake batter into a 25cm baking pan.
Bake for 40 minutes or until golden brown.
In the meantime, prepare the coconut topping. Combine the 1 ⅓ cup powder sugar. 4 tbsp water.
Once the cake is ready, set it aside to completely cool.
Pour the syrup over the top of the cake and around the cake.
Sprinkle the ¾ cup coconut flakes, over and around the cake so that the coconut flakes stick.
Serve with a scoop of your favorite ice cream.
