This Peppers, Feta & Tomatoes Meze is one of those recipes that’s so simple, so ridiculously delicious, and so Greek.  Seriously. It’s the kind of dish that you’ll throw together in under 20 minutes. And then you sit around wondering why you haven’t been eating this every single weekend.

Imagine this: It’s Sunday, the tsipouro, ouzo, or wine is on the table, your friends are coming over (fashionable late as Greeks tend to do), and you need something quick but delicious, but you also don’t want to spend hours sweating in the kitchen with this heat. Enter this little trio of happiness: sweet roasted yellow peppers, juicy tomatoes, crumbled feta, and a few tablespoons of…(guess).  🙂

Let’s talk peppers, peppers are what I like to call a “drop of color” in the kitchen!  They come in every color imaginable, from red to yellow, green, orange, and even purple (yes, those exist too!).  They don’t just bring flavor, but also a lot of flair!  Peppers come in all shapes and sizes. Take these yellow peppers, for example, which are long and thin and so sweet tasting; others are short and chubby; they are made to be stuffed with rice and herbs, or meat or whatever you prefer.

Oh, and let me confess something right off the bat: this dish was invented during one of my classic “what’s left in the fridge” situations. I didn’t invent this recipe; I remembered that I’ve made it in the past with red peppers.  So, this time I went with yellow. I had no red peppers in the fridge. The feta was giving me the look, the peppers were sitting in the corner like forgotten party guests, and the tomatoes were practically begging for attention. A drizzle of olive oil, a little oregano, and my secret ingredient, and boom, you’ve got this delicious Easy Greek Pepper Meze greatness.

Easy Greek Pepper Meze

This easy Greek pepper meze with feta and tomatoes is a colorful, flavorful, and ready in minutes for the perfect appetizer or snack made with feta cheese, yellow peppers, and cherry tomatoes.

Equipment

  • 1 Baking pan
  • 2 spatulas
  • 1 bowl

Ingredients

  • 6 cherry tomatoes Cut in half
  • 6 yellow peppers fresh or jarred, cut into slices
  • 1 onion finely chopped
  • 2 tbsp cream cheese room temperature
  • ¼ cup olive oil
  • 2 cups feta cheese crumbled
  • 2 tbsp oregano dry or fresh

Instructions

  • Preheat oven to 200℃. Wash and dry the cherry tomatoes, then cut them in half.
  • Place the tomatoes in the baking pan and sprinkle a little olive oil over the tomatoes, along with a pinch of oregano.
  • Add the cream cheese and feta cheese to the bowl. Using a spatula, mix until well combined, then season with oregano.
  • Toss in the finely chopped onion and slices of yellow peppers. Use the second spatula to fold and combine the ingredients.
  • Add the mixture into the baking dish and cover the cherry tomatoes. Sprinkle the rest of the olive oil and oregano.
  • Cook until the cheese has melted.
  • Serve hot with fresh bread, crackers or pita bread.
