Coconut Muffins (Kekakia me Karyda)

Hi there,  I woke up this morning thinking to myself what would I like to cook or bake today.  The last two recipes I posted were both Greek so I wanted something different.  I have this lovely Coconut Muffin recipe which I just adore.  It’s different, tasty and easy to make…:)

The Coconut is considered a seed and not a fruit, actually it’s considered a dry Drupe.   Personally, I thought for many years that it was a fruit. 🙁  A few years ago while searching the internet I found out this bit of information. The best part about eating Coconuts is that they are rich in vitamins and minerals.   Hmmm interesting  🙂

COCONUT MUFFINS (KEKAKIA ME KARYDA)

Ingredients

  • 2 cups All Purpose Flour
  • 1/2 cup Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1/2 cup Vegetable Oil
  • 1 cup Milk
  • 1 Egg
  • 1 cup Coconut Flakes
  • 12 cupcake cups

Instructions

  • In a large bowl mix flour, sugar, and baking powder and set aside.
  • In a smaller bowl beat vegetable oil, milk and egg.
  • Add the milk and egg mix, into the flour mix and combine.
  • Place cups into the cupcake pan and fill 3/4 of the cup with the dough. Bake at 180 degrees for 1/2 hr. or depending on the oven.
