Potatoes, can you name a few potato recipes? There are so many, so I am going to add one more. 🙂 Do you like potatoes? Yes, No? Well, it doesn’t matter. I am still going to share these Rustic Potatoes & Bacon Bites with you anyway. Ingredients that almost always exist in everyone’s pantry and fridge. I say almost because there are many vegetarians (like myself) and vegans who do not have bacon on hand. I only buy meat when my family wants a meat meal; I hardly ever have any in my freezer.
Potatoes and bacon are a classic pair for a reason: crispy, salty, soft, golden, and completely irresistible. Rustic cooking is all about letting ingredients shine, and this recipe does exactly that. Potatoes are humble, affordable, and endlessly versatile, while bacon brings richness and depth that instantly changes the dish. When baked together, in a cast iron pan, ohhh myyy the potatoes soak up all that flavor, turning golden and tender on the inside with perfectly crisp edges.
This is the kind of recipe that doesn’t require exact measurements (woo hoo). You can adjust it, tweak it, add herbs, or keep it as is because that also works. Once everything goes into the oven, that’s when the magic happens. The bacon renders slowly, releasing its fat and flavor, while the potatoes roast and caramelize. Rustic Potatoes & Bacon Bites
Equipment
- 1 cast iron pan
- 1 mixing bowl
- 1 cutting board
- 1 knife
- 1 wooden spoon
Ingredients
- 10 potatoes peeled and thinly sliced
- 5 streaky bacon sliced into small pieces
- 2 tbsp butter
- 3 tbsp olive oil
- salt
- pepper
Instructions
- Place the potatoes in a large pot and cover them completely with water. Set the pot over high heat and bring to a boil. The potatoes do not need to be fully cooked. Set aside to cool and then slice.
- Transfer the sliced potatoes to the cast-iron pan.
- Slice the bacon into small pieces. Sprinkle over the potatoes.
- Add the butter, drizzle the olive oil over the potatoes, and season with the salt and pepper. Toss everything together, then bake in a preheated oven at 180℃ for 30 minutes.
- Baked until crispy and golden brown.
