Hello foodies friends,

We have all at some point either at an Italian restaurant or a party tasted the Italian Bruschetta.  Bruschetta or Crostini breads are very similar, made with tomatoes and basil, and a few other ingredients but have you ever come across a Greek Salad and Feta Cheese Bruschetta?  A perfect mix of tomatoes, cucumbers, herbs, and feta cheese which are now in peak season.  I picked up some delicious cherry tomatoes along with cucumbers, onions, and a few more things to make a Greek Salad.  On my way home I was thinking that I wanted to make an appetizer rather than the regular salad.

I had some leftover Ciabatta bread and no I did not bake it.  Who wants to cook in this heat!!  I bought it from our local bakery that actually makes delicious Artistic Bread.   So, I prepared the Greek salad without the onions and olives.  I left out the onions and olives because I wanted the flavors and aromas of the ingredients to stand out.  Onions, traditionally are in a Greek (Choriatiki) salad as I am sure most of you know who have visited Greece.  This is a very simple and refreshing appetizer to serve to your family, and friends, at a party, or even prepare these mini-size Greek salads with Feta Cheese bruschettas and take with you on a picnic or to the beach to snack on.

As far as which bread to use you can use whichever bread.  For this appetizer, I prefer Ciabatta bread, but most people like to use Baguettes.  I toasted the bread slices in my toaster, it’s a quicker solution, and then I brushed olive oil on both sides and topped it with the Greek Salad mix.   I could say that this Greek Salad with Feta Cheese Bruschetta is a bit of both Greece and Italy.

Greek Salad with Feta cheese Bruschetta

Ingredients

  • 6 slices ciabatta bread toasted and sliced diagonally
  • 4 tbsp olive oil
  • 1 tsp oregano dried
  • 10 cherry tomatoes sliced into quarters
  • ½ cucumber sliced into quarter
  • ¾ cup feta cheese crumbled
  • 1 tsp balsamic vinegar
  • ½ tsp pepper

Instructions

  • In a bowl combine three tbsp of olive oil with oregano, pepper, and balsamic vinegar and set aside.
  • Chop the cucumber and cherry tomatoes in quarters.
  • Pour the olive oil dressing over the cucumber and tomatoes and stir.
  • Add in the crumbled feta cheese and slowly mix with a spoon.
  • Toast bread and brush olive oil on both sides.
  • Top with Greek salad and serve cold.
