Hello everyone,

It’s dessert time, and I thought I would start with this simple but tasty, creamy Greek Rice Pudding (Rizogalo) . My mom has been making Greek Rice pudding ever since I can remember, a delicious pudding with a whole bunch of cinnamon. Each spoonful is so tasty, and the aroma of cinnamon warms my heart.  A creamy dessert made with a few simple ingredients Rizi which means rice in Greek and Gala which means Milk in Greek are the two key ingredients.   My mom would make this delicious treat at least twice a week.  Even when I return home to Greece, I’ll always find a little bowl of Rizogalo in the fridge.  To me, this is a bowl of comfort food.

How to make this Greek Rice pudding you ask?  Well, let’s start with the basic ingredients, milk and rice.  I have used and continue to use arborio rice to make Rizogalo.  To be honest  I have tried another rice in the past but it just wasn’t the same.  I know this recipe has many variations, but I prefer to stick to the traditional recipe.  My mother-in-law used to add eggs to her recipe but it was a bit too rich for me and much thicker.  I prefer to stick to the lighter and not-so-thick pudding that I make.

I remember walking up to our house after school and I could smell the aroma of warm milk and cinnamon lingering in the garden and once I entered throughout the whole house. When I was younger I didn’t have the patience to wait for it to cool off.  My mom mentioned that this dessert can be eaten warm, or cold, ohhh such joy!!  To this day I am still impatient and I’m the one preparing this dessert.  🙂

Greek Rice Pudding (Rizogalo)

Ingredients

  • 4 cups milk whole milk
  • 2 cups water
  • ½ cup rice arborio
  • 1 cinnamon stick
  • 4 tbsp sugar
  • tbsp vanilla extract
  • salt pinch

Instructions

  • In a medium pot bring the water to a boil. On high heat add the rice and cook until the rice is tender.
  • Pour in half of the milk, cinnamon stick, and sugar. Stir frequently to prevent the rice from sticking to the bottom.
  • Lower the heat and add the rest of the milk, salt, and vanilla extract. Stir frequently. Cook on low heat until the pudding has thickened.
  • Remove from heat and set aside to cool down. Serve in small bowls and leave it overnight in the fridge. Sprinkle cinnamon powder and serve.
  • This creamy pudding can also be eaten warm. Sprinkle cinnamon powder.
