Brussels sprouts have never been the most popular vegetable, and honestly, I felt the same way for years. That is, until I tried this recipe. So here is my version of Brussels sprouts, my Greek Air Fryer Brussels Sprouts. The air fryer was a game-changer. The first time I ever tried them, they had this strange, almost unpleasant smell that completely put me off. I remember thinking, “Nope, not for me,” and I never went near them again after that.
If you are wondering what the twist is, well, the twist is to add lemon juice after you remove them from the air fryer. And yes… I did add lemon. I mean, how could I not? I’m Greek, and lemon practically jumps into my shopping basket on its own. A squeeze of fresh lemon at the end wakes everything up, brightens the flavor, and gives those crispy Brussels sprouts that unmistakable Mediterranean sparkle. Honestly, between the olive oil, garlic powder, and lemon, these sprouts were so good.
Once you toss them in a little olive oil, season them with salt and pepper, and let the air fryer do it job. Crispy edges, tender centers, and that irresistible roasted flavor. This Greek Air Fryer Brussels Sprouts recipe is simple, quick, vegan, vegetarian, and, of course, Greek‑inspired, because I had to add a Mediterranean twist. If there’s one thing we Greeks know how to do, it’s take a vegetable and turn it into something delicious. The Brussel Sprouts I used for this recipe were already trimmed. All I did was add them to a bowl of room temperature water to soak for about 30 minutes.

Greek Air Fryer Brussel Sprouts
Equipment
- 1 air fryer
- 1 bowl
- 1 spatula
- 1 knife
- 1 cutting board
Ingredients
- 2 cups brussel sprouts trimmed and cut in half
- ⅓ cup olive oil
- 1 tbsp garlic powder optional
- 1 lemon
- salt
- pepper
- 2 cups water room temperature
Instructions
- Trim off any excess or yellow leaves from the Brussels sprouts. Place them in a bowl with 2 cups water, and let them soak for about 30 minutes to clean and refresh them.
- Pat the Brussels sprouts dry with a kitchen towel, then use a sharp knife to slice each one in half.
- Drain water from the bowl, then dry. Add the 2 cups brussel sproutsback into the bowl, then pour the ⅓ cup olive oil over them. Season with 1 tbsp garlic powder, salt, and pepper. Gently Toss
- Preheat the Air fryer by pressing the preheat button.
- Layer the Brussels Sprouts into the basket.
- Cook at 200℃ for 15 minutes or until golden brown in certain spots.
- Squeeze some lemon juice over the Brussels sprouts and serve immediately.
