Easy Spicy Seafood Pasta Recipe

Hi fellow foodies

How is everyone doing?  Wow!! we have come to the end of another month and a week.  This month went by so fast, there were days where I lost track of what day and time it was.  I sometimes had to look at my phone to double-check that it was  Monday, Tuesday, or whatever days it is.  The weather has been kind of crazy here, rain, windy, cold, and then a mini-heatwave.  pfff

I got the chance to sit in the garden and do some work early this morning.  There seems to be a lot of noise going on these past few months.  Most people are renovating their homes which means a lot of noise, from drilling, banging, sawing and of course, screaming. 

This is definitely not ideal since I work from home.  Working at home does have its ups and downs, but this is just going overboard  I have never heard this much noise these past two years working from home as I have these past 2 months.  I have to admit that I am quite upset because I had to cancel many lessons due to this situation.  I am not the kind of person who gets angry very easily, I do get upset but on Monday I was beyond upset I was furious!! 

There was so much noise that I could not hear myself nor the student.  I apologized to the student,  she understood and I had to end the lesson early.  I have lost count as to how many lessons I have canceled due to this situation. 🙁   So, to calm down I went to the kitchen and started cooking…This is my go-to de-stress activity.  I cooked up a storm that day, and the Spicy Seafood recipe was the first recipe I chose to prepare and a great choice for a chilly day. 🙂

In total, I made 4 different recipes on Monday, so I do have a lot more to post 🙂  That’s about it everyone and I am sorry for my ranting but I just needed to get it out there!!

Easy Spicy Seafood Pasta Recipe

Shrimps, Mussels cooked in fresh tomatoes sauce with pasta.

Ingredients

  • 1 leek chopped (white part)
  • 1 celery stalk chopped
  • 15 fresh shrimps boiled and cleaned, peeled and deveined
  • 15 fresh mussels
  • 2 cups orzo pasta
  • 2 tbsp tomato pasta
  • 3 fresh tomatoes grated
  • ¼ cup dry white wine
  • cup parsley
  • ¾ olive oil
  • salt
  • pepper
  • 2 tbsp sunflower oil for frying
  • 1 liter water
  • Parmesan cheese garnish

Instructions

  • Saute celery and leek in sunflower oil
  • Clean, peel and devein shrimps. you can also use frozen Mussels if you are not able to find fresh ones.
  • Add shrimps and mussels into celery and leek mix. Once the seafood is ready set aside.
  • Add orzo pasta into the celery and leek mixture stir for a few minutes.
  • Add 2 tablespoons of tomato paste and continue to stir.
  • Add 1 liter of water, wine.
  • fresh tomatoes, stir.
  • Cook and low to medium-high heat until sauce has thickened.
  • Serve garnished with parmesan cheese
