Easy Bake Apple Cake

Hello foodies,

Apple season is back, and you know what that means… time to bake Apple cakes!  There is such a huge variety of apples here that I sometimes find it difficult to choose.  Green, red, dark red, yellow, WOW, what do I do?  Well, it was obvious that I would choose green and red to make this Easy Bake Apple Cake.  The aroma of apples baking makes the whole house feel so warm and cozy.

It’s funny because, this time of year, everywhere I go, I smell apple cakes baking. When I take the dogs out for a walk around the neighborhood, the air is filled with the sweet, spiced scent of fall. The leaves are changing into those beautiful, earthy shades of oranges, reds, and golds.  And that is Mother Nature showing off her work once again.  It’s the perfect time to get back into the kitchen, turn on the oven, and bake up something simple and delicious… like this Easy Bake Apple Cake.  You can say it’s slightly similar to the French Apple Cake.

This Easy Bake Apple Cake is one of those recipes that I keep coming back to whenever I want something sweet but don’t feel like going all out. I’ve posted other apple recipes in the past, but I am not sure why I forgot to post this recipe.  A few ingredients, a few splashes of rum (you read right), some apples, and before you know it, you’ve got a soft, golden cake that tastes like autumn in every bite. The apples melt into the batter, creating a sweet, moist texture, and if you’re like me, you’ll want to sneak a slice straight out of the oven.  Careful dipping in because it is quite hot.

You can also toss in a handful of nuts, that’s if you want a crunchy taste. Go for it. I added cinnamon, sugar on top before baking. Sometimes, I even drizzle a little honey over the warm cake; trust me, it’s absolutely divine, darling. 🙂

This Easy Bake Apple Cake isn’t just a recipe; this is an elegant dessert that makes a weekday feel special. It’s perfect with your morning coffee, as an afternoon pick-me-up, or as a sweet way to end the day.  Well, it looks elegant to me, but you know everyone sees things differently.:)

Easy Bake Apple Cake

This Easy Bake Apple Cake is the ultimate cozy dessert. It's simple, sweet, and bursting with the warm flavors of fall. With just a few basic ingredients and fresh apples, it bakes up beautifully soft and golden.

Equipment

  • 1 stand mixer or hand mixer
  • 1 mixing bowl
  • 1 spatual
  • 1 Baking pan
  • 1 bowl medium size
  • 1 baking pan, round or rectangular 24 or 26 cm

Ingredients

  • 4 red apples peeled and sliced
  • 2 green apples grammy smith
  • 2 ½ cups self-rising flour
  • 1 cup sugar
  • 2 eggs
  • ½ cup butter vegan room temp cut into small cubes
  • ½ cup milk fresh
  • 4 tbsp rum
  • cinnamon sugar topping
  • ¼ cup butter melted
  • ¼ cup dark brown sugar
  • 1 ⅓ tbsp cinnamon powder
  • icing sugar
  • lemon juice to pour over the slices apples

Instructions

  • Add the eggs and sugar into the bowl and mix on high speed on your stand mixer with a paddle until light and fluffy. You can also use your hand mixer with large beaters.
  • Cut the apples into slices and add some lemon juice so that they don't turn into a brownish color.
  • Preheat the oven to 180℃.
  • Add the butter, the milk, and the rum into the batter and continue to whip.
  • Slowly add in the self-rising flour.
  • Add to the medium-sized bowl the melted butter, the cinnamon, and the dark sugar mix, stir until the ingredients have combined.
  • Butter your baking pan and add the batter; use a spatula to spread. Add the slices of apples on top, covering the batter. Pour the cinnamon mixture over the apples.
  • Bake for 35 to 40 minutes. Set the apple cake aside to cool off and then sprinkle with icing sugar.
