Chocolate Chip Cupcake / Muffin Party

Hello 🙂

Catching up with friends who live around the world has been difficult these past few months.  So, I sent out a message last week and mentioned to them that we should have a Virtual Coffee/Cupcake Party.  They loved the idea!!  We all prepared different cupcakes, and or muffins brought our Java chatted on Skype for about 1 hour. It was fun!!   

I decided on making muffins, rather than cupcakes. The frosting part is difficult for me. I just can’t seem to manage to squeeze the frosting out of the plastic bag.  I have bought all types of bags and nozzles and well I am useless when it comes to frosting. Hubby asked if I could add some chocolate chips in them which I did.  I also made a small batch of Vanilla muffins for me.  When I say small I mean 4. 🙂  I ate two cupcakes while chatting and two this morning while working.    Here’s a question for ya, do you think that Muffins can be eaten all year round orrrr are they just for those cozy winter months?   

Ever since the beginning of the month I have been feeling restless, I guess it’s the Aries in me. I want to go see my mom, my friends, dip into those beautiful turquoise waters in Greece and just get away from everything for a while.  Is anyone else feeling like I am?  Would love to know if you are planning on going on vacation or vacationing at home.

Chocolate Chip - Muffin Party

A traditional muffin recipe with a few extra splashes of Vanilla extract and Chocolate Chip bites.

Ingredients

  • 3 cups all-purpose flour
  • ¾ cup soya milk
  • ½ cup sugar
  • 2 tsp baking powder
  • ¾ cup melted butter room temp
  • 2 tbsp vanilla extract
  • ¾ cup chocolate chips
  • 2 eggs
  • salt pinch

Instructions

  • In a medium bowl add and mix all dry ingredients.
  • In a second bowl all the remaining ingredients mix. Add egg batter into dry ingredients and combine together.
  • Add a large scoop of batter into each paper cup. Bake at 180 until golden brown
