These Air Fryer Marinated Mushrooms are irresistibly delicious and come together in no time, so quick, easy, and packed with flavor! I had some frozen mushrooms hanging out in my freezer for a while, you know, the kind you buy thinking, “I’ll definitely use these this week,” and then totally forget about them. 🙂
I’ve always loved mushrooms of all kinds, in all shapes and forms. But if I had to pick a favorite? It’s definitely the kind that’s sautéed in butter until they’re golden, tender, and completely irresistible. There’s just something about that rich, I can also say earthy flavor that always hits the spot. Not that this recipe isn’t delicious, because it is, but you know how it is. We all have that one favorite dish that makes you drool when you think about it. For me, it’s the buttery mushrooms that I could eat straight from the pan.
So, here’s what I did: I marinated the mushrooms in olive oil, soy sauce, and balsamic vinegar. You can play around with this by adding a pinch of garlic powder or going all in with fresh garlic. Toss in your favorite herbs, give it a good shake, and make it your own. Parsley, dill, thyme… whatever you’re into, it all works beautifully with the mushrooms. Let the mushrooms chill in the fridge for about an hour before popping them into the air fryer. This gives them time to soak up all those delicious, savory flavors and makes them even more irresistible once roasted. When the mushrooms were done, I sprinkled some oregano on top for that Greek touch.
Place a sheet of air fryer parchment paper into the basket. This helps keep things tidy and prevents the mushrooms from sticking while they roast. After a quick spin in the air fryer, they came out juicy and packed with flavor. I could honestly snack on them straight off the tray (and I did). These Air Fryer Marinated Mushrooms are also perfect as a side dish, part of a mezé spread, or even piled high on a slice of crusty bread.
Oops… just finished licking my fingers after devouring a few of these mushrooms. I couldn’t help myself, they were that good. Forget the fork, I went straight in with my hands. Sometimes, the tastiest bites are the messiest ones! Don’t ya think so?

Air Fryer Marinated Mushrooms
Equipment
- 1 air fryer
- 1 air fryer parchment sheet
- 1 small bowl
- 1 spoon
Ingredients
- 1 ½ cups mushrooms frozen or fresh sliced
- 40 ml olive oil
- 40 ml balsamic cream
- 40 ml soy sauce
- 2 tbsp dried oregano
Instructions
- Mix the soy sauce, olive oil, and balsamic cream in a bowl until well combined
- Place the parchment sheet into the air fryer and add the sliced mushrooms
- Pour the sauce mix over the mushrooms.
- Cook in the air fryer at 200℃ for 10 to 12 minutes.
- Garnish with oregano and serve.
