A buttery pecan cookie that has a crunchy texture and a strong roasted taste to it.

- 1 cup pecans roasted, chopped
- 1 cup flour shifted
- ¾ cup butter at room temperature
- ½ cup brown sugar
- ⅛ tsp salt
- 1 ½ tsp vanilla extract
Preheat oven to 180c. Mix butter and sugar for a few minutes. Add vanilla extract and beat for 1 minute.
Add sifted flour, and salt into the butter batter and use a spatula to combine the dough.
Fold in the roasted chopped pecans. Use a spatula to combine.
Separate the cookie dough into 12 pieces. Shape the dough into separate balls. The size depends on how big you want each cookie. I shaped them a bit bigger than a walnut. Place on parchment paper a few cm/inches apart. Flatten each cookie with the back of a spoon.
Bake for 20 minutes. Set aside to cool in the baking pan or on a cookie sheet.
