Greek Sausages, Spicy Peppers in Tomato Sauce (Spetsofai)

Spicy sausage and peppers stewed together in thick tomato sauce. The original recipe calls for Aubergines, if you have some on hand use them.

red bell peppers
chopped

spicy sausages
sliced

garlic cloves

bay leaves

tomato paste

olive oil

Instructions
Slice sausages.
Slice peppers, and chop the onions.
Add the olive oil into a pot or frying pan. Toss in all the ingredients and give it a gentle mix.
Stir in the tomato paste and cook on low to medium heat for 30 minutes.
Once the Spetsofai is ready serve with fresh crusty bread and feta cheese on the side.
