In a large skillet add olive oil and chopped ingredients, simmer on medium heat for a few minutes, then add a pinch of salt, pepper and stir.
Continue by adding in the spinach,
and mushrooms.
In a large bowl add eggs and beat. Once your ingredients have been cooked, add into the eggs and stir.
Brush oil your muffin pan and add mix into each socket.
Bake at 180 degrees for 20 minutes or until golden brown.
