Isn’t there something magical when making bread from scratch? This Homemade Greek Village Bread is just that. The smell, the texture, the way it brings meeee and everyone to the table. It’s comfort in its simplest form.
Growing up in the States and in a Greek family, bread was never just “bread.” It was part of every meal, always on the table, ready to scoop up sauces, pair with cheese, or dip into olive oil. The village bread, or in Greek, horiatiko psomi, as we call it is that crusty, hearty loaf that tastes like home. No fancy ingredients, no shortcuts, just flour, yeast, water, and time.
The very first time I tried baking bread, I can’t even tell you how many times I measured (and re-measured!) the flour and yeast, hoping I’d get it right. Have you ever seen the muppets show the “Swedish Chef”? That was meeee in my kitchen. I was just starting to cook and bake, had just gotten married, and well, you know…..
What I adore most about this bread is how endlessly useful it is. Straight out of the oven, with just a drizzle of olive oil and a pinch of oregano. The next day, it’s the perfect base for hearty sandwiches. Sometimes, I’ll even pop a slice into the air fryer, spread butter, and finish it off with a spoonful of apricot marmalade. This Homemade Greek Village Bread is crunchy on the outside, soft and fluffy inside. 🙂
It’s not perfect every time, and that’s okay. Sometimes it rises high, other times it looks a little “rustic.” But every loaf has that homemade charm that you just don’t get from store-bought. This is a beautiful reminder that food made with your own hands has a kind of magic you can taste.

Homemade Greek Village Bread
Ingredients
- 2 ⅓ cups bread flour
- ¾ cups water luke warm
- 1 ½ tsp dry yeast
- 1 ½ tsp salt
- 1 tsp sugar
- sesame seeds optional
Instructions
- Preheat the oven to 220-250℃.
- Add all the ingredients to a bowl. Start with the dry ingredients and pour in the lukewarm water towards the end. Use your hands to mix.
- Cover the bowl with a kitchen towel and set it aside somewhere warm to double its size.
- Lightly coat your hands with olive oil or vegetable oil, then fold the dough inwards, shaping it into a smooth ball.
- When the dough ball is ready, cover it with a kitchen towel and let it rest for about 30 minutes, giving it time to rise a little more.
- Line your bread pan with parchment paper, then gently place the dough inside. Sprinkle sesame seeds over the bread dough.
- Bake for 45 minutes or until golden brown with a crunchy crust.
