Air Fryer Chicken Meatballs

Four air fryer chicken meatballs cooked with a golden brown color.

My dear foodie friends,

I’m perfectly happy with a plate of roasted veggies or a bubbling pan of baked feta.  But I still have to cook meat for the non-vegetarians in my household. And that’s how these Air Fryer Chicken Meatballs came to life. I always have a package of ground chicken in my freezer.  This is my emergency protein stash for when dinner or lunch needs to be quick but still homemade.

I found myself reaching for the air fryer again. 🙂  No messy oil popping across the stovetop, no anxious “is it cooked all the way through?” moments. Just perfectly golden chicken meatballs quietly doing their thing in the air fryer. (Let’s be real: in my world, that usually means dashing after two very opinionated basset hounds.  These two are convinced every beep from the kitchen means snack time. hahhahahah believe me, this is so true!

I started with ground chicken, a handful of dried-out bread (you can use breadcrumbs, grated the cheese for that saltiness, and chopped the herbs. You can add any salty cheese you love; I used kefalotyri, a salty Greek cheese.  I love Kefalotyri and Graviera Naxou; one is salty, and the other is sweet.

Here’s the beauty of the air fryer: eight to ten minutes later, you’ve got meatballs that are crispy on the outside with a taste of that delicious cheese you added. I served mine with a side of lemony yogurt dip, but you can toss them into pasta, pile them in a pita with tzatziki, or eat them straight off the tray while pretending you’re “taste-testing.” (We all know what’s really happening.)

Make a double batch. Trust me. Because when you “taste-test” half of them before dinner, you’ll be glad you did. You can also use ground Turkey instead of chicken.

Have a great morning/afternoon/evening!
