Spanakorizo (Spinach and Rice Recipe)

A vegetarian/vegan plant based dish made with fresh spinach and rice.

- 2 cups fresh spinach washed
- 1 onion chopped
- ¼ cup olive oil
- 3 spring onions
- ½ cup arborio rice
- 2 tbsp fresh dill chopped
- ¾ cup water
- salt
- pepper
- lemon juice
Add the olive oil to a large pot and let it warm up over medium heat.
Toss in the chopped onion and sauté until soft for a few minutes.
Toss in the spinach, chopped fresh spring onions, and the herbs. Give everything a good mix so the flavors start to come together.
Season with a little salt and pepper
Pour in the water, give everything a gentle stir, and let it simmer away until the rice is cooked and the spinach is tender.
Served hot or cold, this dish is delicious, as a main or a side dish.
