Spanakorizo (Spinach and Rice Recipe)

Ingredients
  

  • 2 cups fresh spinach washed
  • 1 onion chopped
  • ¼ cup olive oil
  • 3 spring onions
  • ½ cup arborio rice
  • 2 tbsp fresh dill chopped
  • ¾ cup water
  • salt
  • pepper
  • lemon juice

Instructions
 

  • Add the olive oil to a large pot and let it warm up over medium heat.
  • Toss in the chopped onion and sauté until soft for a few minutes.
  • Toss in the spinach, chopped fresh spring onions, and the herbs. Give everything a good mix so the flavors start to come together.
  • Season with a little salt and pepper
  • Pour in the water, give everything a gentle stir, and let it simmer away until the rice is cooked and the spinach is tender.
  • Served hot or cold, this dish is delicious, as a main or a side dish.
