Salmon with Fusilli Pasta

A delicious seafood pasta dish with salmon, feta cheese, and cherry tomatoes all combined with delicious herbs makes this a light pasta dish.

Ingredients
  

  • ¾ pounds fresh salmon or 450 grams
  • 2 ⅓ cups Fusilli pasta
  • 1 ⅓ blocks feta cheese
  • 85 ml olive oil
  • 15 cherry tomatoes whole
  • ½ tbsp tarragon
  • salt optional
  • pepper
  • fresh parsley

Instructions
 

  • Preheat oven to 180℃.
  • Boil the pasta in water. Drizzle a little olive oil in the pan.
  • Add the feta cheese and cherry tomatoes and place on the oven's lowest rack. Cook both tomatoes and feta cheese until they have melted.
  • Place the salmon in a separate pan and drizzle olive oil, pepper, and tarragon.
  • Remove pan from oven when ready. Use a fork to combine both ingredients. Remove the salmon and flake with a fork into bite-size pieces.
  • Drain and add the pasta into a large bowl. Add in the salmon mix and slowly toss. Chop fresh parsley and garnish your pasta dish.
  • This is a dish that can be eaten hot or cold.
