Coconut Lime Pound Cake Recipe
A delicious summer dessert with a tangy taste of Lime and the sweet taste of Coconut.
- 2 cups All Purpose flour or self rising flour
- 1 tbsp baking powder
- 1 tbsp lemon rind grated
- 1 cup coconut desiccated
- 1 cup brown sugar
- ¾ cup butter melted
- 2 eggs
- 1 cup coconut milk room temp
- 2 ready-made Icing packages
- 3 tbsp lime juice
Preheat the oven to 180, In a large bowl, flour, and lime zest
and brown sugar. Mix dry ingredients and set aside.
In a medium-size bowl mix eggs, butter, and coconut milk.
Pour egg batter into dry ingredients and mix by hand. Pour into a buttered baking pan and bake at 180 for 35 min.
Set aside to cool. In a small bowl mix icing with lime juice and pour over cake. Serve with ice cream and a glass of Ice Tea
