Wash Aubergine and dry.
Cut Aubergine in half and pre- heat oven at 180 degrees, once that’s done place in oven and bake until soft.
Once Aubergine is ready cut into smaller sizes and set aside to cool.
Dice onion and peel skin off the garlic.
Place pepper, aubergine, onion, garlic, sugar, salt, olive oil, into the food processor.
Add Tomato paste.
Toss in Feta Cheese
Blend until all combined.
Serve with fresh bread or crackers, cucumbers..:)
