- 2 ½ cups orzo
- 15 shrimps fresh or frozen
- 2 yellow onions finely chopped
- 1 leek only the white part (finely chopped)
- 1 cup peas frozen
- 2 garlic cloves minced
- 1 ½ tbsp tomato paste
- ½ cup Tomato Sauce
- 4 cups vegetable broth
- 70 ml white vinegar optional
- 3 tbsp fresh dill finely chopped (optional)
- 3 tbsp fresh parsley finely chopped (optional)

- smoked paprika optional
- ¼ cup olive oil
- ½ lemon juice optional
In a wide, shallow pot, heat 2 tablespoons of olive oil and sauté the 15 shrimps for 5 minutes on each side, just until they get a little color. While sautéing, season them with salt, pepper, and smoked paprika. Transfer the shrimp to a plate.
In the same oil, sauté the 2 yellow onions and the 1 leek for 2–3 minutes. Add the 1 ½ tbsp tomato paste, ½ cup Tomato Sauce and 1 cup peas. Sauté for a few minutes. Add the 2 garlic cloves stir.
Pour in the 70 ml white vinegar and wait to evaporate. Lower the heat and continue stirring. Add 2 ½ cups orzo and the 4 cups vegetable broth. and the rest of the olive oil. When the orzo absorbs most of the liquid, sprinkle in the 3 tbsp fresh dill and the 3 tbsp fresh parsley.
While the orzo is still cooking, add the shrimp. Stir gently. Cook until the orzo is tender.
Serve hot, with your favorite bread.
