- 6 eggs
- 1 red bell pepper finely chopped
- 1 green bell pepper finely chopped
- ½ cup green beans fresh or frozen
- 1 fresh onion finely chopped
- 5 cherry tomatoes cut in half
- 1 leek sliced
- ¼ cup milk
- grated parmesan cheese
- salt optional
- pepper
- smoked paprika
- 3 tbsp olive oil
Preheat oven to 180℃.
Add the olive oil to the cast-iron pan.
Add the vegetables, and sauté them until tender.
Season with salt, pepper, and the smoked paprika.
Crack the eggs into a bowl, pour in the milk, and whisk together. Season with a pinch of salt and pepper.
Pour the whisked egg mixture over the vegetables.
Then pop it into the oven and bake until golden brown and fluffy.
Sprinkle the grated Parmesan cheese over the omelette.
