Preheat oven to 180℃. All the ingredients should be at room temperature.
Combine all three cheeses in a large bowl.
In a separate bowl whisk eggs.
Add egg mix to cheese mixture and stir until combined.
sprinkle in the grated nutmeg and give it a good stir.
oil brush the bottom of the baking pan, add one country-style sheet, and oil brush the phyllo until the first three sheets are in the pan.
Add in the filling, and make sure that it's spread evenly.
Fold inwards excess phyllo sheets.
Add one phyllo sheet, continue the process until you've reached the last sheet.
Brush the top sheet with olive oil and score. Cut through the phyllo dough, not all the way down. Sprinkle sesame seeds to finish. Wet your fingers and sprinkle water over the pie.
Bake for 45 minutes, this cheese pie can be eaten hot or cold.
