Dice Leek and Onion..
Slice the Calamari into rings.
Slice tomatoes and then in a large pot add in the olive oil and heat on low heat. Add in the diced leek and onions and stir.
Continue by adding in the sliced Calamari, tomatoes, tomato paste and simmer for a few minutes.
Pour in the wine and cook for about 20 minutes on medium to high heat.
Add salt and pepper and 1 litre of water & noodles.
Stir and cook for 30 minutes. Once the tomato sauce has thickened its ready to be served with delicious fresh bread and some Parmesan Cheese as a topping. I didn’t top it with cheese this time around..:)
