- 2 cups barlotti beans soaked in water overnight
- 2 tbsp tomato paste
- ½ cup olive oil
- 1 onion finely chopped
- 2 garlic cloves minced
- ½ tbsp sugar
- ½ tbsp Aegean Organics Thyme
- 1 ½ tbso fresh dill finely chopped
- salt
- pepper
- sweet smoked paprika
For the 2 cups barlotti beans soak them overnight. Boil them until they soften. Drain and set aside.
Preheat your oven to 180℃. (375℉)
In a sauté pan over medium heat, warm one tablespoon olive oil. Add the 1 onion, 2 garlic cloves and a pinch of salt. Sauté for a few minutes until soft. Add the 2 tbsp tomato paste, and stir with a wooden spoon. Add the tablespoon of ½ tbsp sugar, reduce the heat, and let the tomatoes cook. Pour in the ½ cup olive oil. Stir gently.
Transfer the boiled beans into a baking pan. Pour the tomato mixture over the beans and season with another pinch of salt pepperand sweet smoked paprika. Sprinkle in the ½ tbsp Aegean Organics Thyme and mix gently so the flavor spreads evenly.
Bake uncovered for 40 minutes or until the sauce thickens and the beans absorb the flavors.
About 5 minutes before serving, stir in and garnish the 1 ½ tbso fresh dill so it stays bright and aromatic.
