Ingredients
  

  • 1 package spaghetti
  • 15 sun-dried tomatoes
  • 1 onion
  • 2 garlic cloves
  • 2 tbsp capers optional
  • ½ tsp dry oregano
  • ¼ cup olive oil
  • salt optional
  • pepper

Instructions
 

  • In a large pot, add the 1 package spaghetti . Boil as specified on the package.
  • In a large pan, add the ¼ cup olive oil and 1 onion Cook until soft and fragrant, then remove the pan from the heat.
  • Add the 15 sun-dried tomatoes, 2 garlic cloves, 2 tbsp capers, and ½ tsp dry oregano to a food processor or blender.
  • Blend on high for 3 minutes. Transfer the blended tomato mixture to the pan with the cooked onion.
  • Use a ladle to add some hot pasta water to the tomato mixture. Stir until the sauce becomes smooth. If it still feels thick, add a little more pasta water.
  • Drain the pasta and add it directly to the tomato sauce. Stir well until the pasta is fully coated.
  • Garnish and serve.
