Greek Walnut Christmas Cookies

A special cookie for a special holiday. Rich in Walnuts, Brandy and Honey

Ingredients
  

  • ¼ cup Semolina
  • 1 ⅔ cups All-Purpose Flour
  • cup Walnuts crushed and some for topping
  • 1 Orange zest
  • ¾ cup Fresh Orange Juice
  • 2 tsp Cinnamon Powder
  • 1 tsp Allspice
  • ½ cup Vegetable Oil
  • ½ cup Olive OIl
  • ½ tsp Baking Soda
  • 3 tbsp Brandy
  • ¼ tsp Salt
  • Ingredients for Syrup
  • 3 cups Sugar
  • 1 cup Water
  • Orange peel
  • 1 Cinnamon Stick
  • 10 All Spice Cloves whole
  • 1 ½ tbsp Butter (optional)
  • 1 ½ cup Honey

Instructions
 

  • In a large bowl combine all the dry ingredients. The orange zest should combined in the dry ingredients
  • In a medium-size bowl combine vegetable oil, olive oil, and orange juice. (if you plan to use butter melt it before adding into the rest of the ingredients., I made some with and some without using butter)
  • Pour wet ingredients into dry ingredients and give it a few turns with your hand. Make either bite-size round-shaped or oval-shaped cookies. Bake in the oven for 40 minutes or until golden brown.
  • In a medium-size saucepan add in the ingredients for the syrup except for the honey. Boil for 10 minutes and set aside for 30 minutes. Once the syrup has cooled add in the honey and place in the fridge for 1 hour.
  • Take out the syrup and once the cookies are out of the oven, start to dip into the cold syrup. Set aside to cool.
