Salmon & Spinach Quiche

- 250 grams Spinach
- 190 grams Salmon
- ⅓ cup Dill
- ½ cup Leek Ifinely chopped)
- 6 Phyllo Dough Sheets
- 2 Eggs
- 3/4 cup Cream
- 2 tbsp Olive Oil
- ¼ cup Lemon Juice
- Lemon Zest
Wash, drain Spinach
In a medium-size, frying pan add in chopped Leek and Spinach. Saute for a few minutes, set aside to cool.
Oil brush a round baking pan and layer the Phyllo Sheets one on top of the other.
Beat eggs, cream lemon juice, lemon zest until combined.
Place Spinach into baking pan and spread to cover the phyllo sheets. Continue by adding the Salmon.
Pour egg mixture over the Salmon and Spinach.
Bake for 30 to 35 minutes or until golden brown. Serve warm
