Split Pea and Carrot Soup

A colorful and tasty soup for those who are or not Vegetarian.

  • 500 grams Peas and Carrot
  • 1 Leek (chopped)
  • ½ cup Dill
  • ½ cup Parsley
  • 1 Garlic Clove (optional) For a more intense taste add more garlic
  • 1 cup Tomato puree
  • 1 tbsp Sugar
  • Salt
  • Pepper
  • 1/4 cup Olive Oil
  • 1/2 litre Water


  • In a medium-size pot add Olive Oil and Leek. Saute for 5 minutes
  • Stir leek and add-in chopped Dill
  • continue by adding Parsley, give it a good stir.
  • Add-in tomatoes, peas, carrots and finish by adding in water. Stir and boil until vegetables are cooked and soup has thickened. You can add less water and make this a light salad.
