Split Pea and Carrot Soup
A colorful and tasty soup for those who are or not Vegetarian.
- 500 grams Peas and Carrot
- 1 Leek (chopped)
- ½ cup Dill
- ½ cup Parsley
- 1 Garlic Clove (optional) For a more intense taste add more garlic
- 1 cup Tomato puree
- 1 tbsp Sugar
- 1/4 cup Olive Oil
- 1/2 litre Water
In a medium-size pot add Olive Oil and Leek. Saute for 5 minutes
Stir leek and add-in chopped Dill
continue by adding Parsley, give it a good stir.
Add-in tomatoes, peas, carrots and finish by adding in water. Stir and boil until vegetables are cooked and soup has thickened. You can add less water and make this a light salad.
