Trenette Pasta with Avocado Pesto and Cashews
A light Pasta dish with avocado, dill and olive oil.
- 1 package Pasta
- 2 Avocados (cut in half)
- 2 Fresh Scallions (chopped)
- ½ cup Dill
- ½ cup Olive Oil
- ¼ cup Cashews
- ½ cup Pasta Water
- 1 Garlic Clove (optional)
Cut Avocados in half and then scoop out the filling
Wash and chop fresh scallions
Add all the ingredients into a food processor or blender. Mix on high speed for a few minutes.
Mix Cashews on high speed in the blender.
Take a 1/2 cup of pasta water and add into the Avocado mix..beat on high for a few minutes.
If the pesto is too thick add a bit more water.
Add Avocado Pesto into pasta top with crushed Cashews. Serve hot
