Trenette Pasta with Avocado Pesto and Cashews

A light Pasta dish with avocado, dill and olive oil.

  • 1 package Pasta
  • 2 Avocados (cut in half)
  • 2 Fresh Scallions (chopped)
  • ½ cup Dill
  • ½ cup Olive Oil
  • ¼ cup Cashews
  • Salt
  • Pepper
  • ½ cup Pasta Water
  • 1 Garlic Clove (optional)


  • Cut Avocados in half and then scoop out the filling
  • Wash and chop fresh scallions
  • Add all the ingredients into a food processor or blender. Mix on high speed for a few minutes.
  • Mix Cashews on high speed in the blender.
  • Take a 1/2 cup of pasta water and add into the Avocado mix..beat on high for a few minutes.
  • If the pesto is too thick add a bit more water.
  • Add Avocado Pesto into pasta top with crushed Cashews. Serve hot
