Beetroot Salad with Greek Yogurt

Ingredients
  

  • 2 cups Beetroot (shredded)
  • 1/2 cup Greek Yogurt
  • 1 1/2 tbsp Olive Oil
  • 1 Garlic Clove (optional)
  • 1 tsp Salt
  • 1 tbsp Smoked Paprika
  • 1 tbsp Balsamic Vinegar (optional)

Instructions
 

  • Boil Beetroots, set aside to cool. Peel off skin and shred (I used a grater)
  • Add in Greek Yogurt, Olive Oil, Salt, Smoked Paprika. Combine ingredients.
  • Place in fridge for one hour.
