GREEK STYLE SCRAMBLED EGGS & TOMATOES (STRAPATSO ME GIAOURTI)

Ingredients

  • 4 Tomatoes grated
  • 4 Eggs
  • 100 grams Greek Yogurt
  • Olive Oil
  • 1 teaspoon Oregano
  • Salt
  • Pepper
  • 1 teaspoon Sugar

Instructions

  1. Add about 6 tablespoons of olive oil, tomatos and sugar into a frying pan. Let this simmer until tomato juice has evaporated.
  2. In a large bowl add the eggs, salt, pepper, yogurt, oregano and whisk until mixed.
  3. Add the mixture into the frying pan and combine with tomatoes. Stir for 15 minutes at medium heat. You can either enjoy this on bread as a sandwich, or just as a delicious main dish.
