LEMON FLAVORED CHICKPEA SOUP

Ingredients

  • 1 1/2 cups of Chickpeas
  • 1 large Onion diced
  • 1 Garlic clove diced (optional0
  • 2 Bay leaves
  • 1/3 cup Olive Oil
  • 1 Lemon Juice Optional
  • Salt
  • Pepper

Instructions

  1. In a large saucepan add Chickpeas and cover with water. Boil for 20 minutes or until chickpeas are soft. Toss in the onion, garlic, bayleaves and continue to simmer for 15 minutes.
  2. Add in Olive Oil, salt and pepper and boil for 1 hour.
  3. Top by adding the lemon juice for that extra flavor.
