Penne Pasta with Shrimps and Peppers in Tomato Sauce

Hii!!

How is everyone today/afternoon/evening….In my previous post, I mentioned that I did a lot of cooking and that is true.  So, this time I am back with another delicious and pretty simple Shrimp, Peppers, and Tomato Sauce recipe.  I used Red Bell Peppers this time because I used the leftover Paprika Peppers to make a 3 Cheese Paprika Pepper Quiche. hahhaha   WIll be posting that one next week. 🙂  

Well, it seems that things are changing, or shall I call this the “New Norm”  but we are slowly going back to our lives.  It seems that hair salons, nail salons, and all other department stores and smaller stores are opening up again as of next week.  Personally, I do need a hair cut but I decided to wait it out,  I waited 3 months a few more weeks is not going to bother me.  I can still manage my hair….hehehe

I think everyone is happy about this and so am I to be honest.  But self-distancing will continue to be a part of our lives for the next few months.  And we might also have to accept the fact that we might not be able to go on vacation this year…hubby due to his HA was not able to go back last year so we were hoping that this year we would be able too. But we will see how things will evolve in the next few months.

Penne Pasta with Shrimps, Peppers in Tomato Sauce

Shrimps, Peppers and Pasta mixed with a delicious homemade tomato sauce.
Prep Time 15 mins
Cook Time 30 mins
Course Main Course
Cuisine Mediterranean
Servings 4 people

Ingredients
  

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion diced
  • ½ cup olive oil
  • 1 ½ cups water
  • ½ cup dry white wine
  • 4 cups shrimps boiled
  • 1 tbsp tomato paste or fresh tomatoes
  • ½ cup dill
  • salt
  • 1 tbsp smoked paprika
  • parmesan cheese

Instructions
 

  • Add peppers and onion into a pan....sauté until peppers are soft.
  • continue by adding the water, olive oil, and wine.
  • add boiled shrimps and dill.
  • add the tomato paste, salt, smoked paprika.
  • cook until sauce has thickened.
  • Garnish with Parmesan cheese.

    Simple but really delicious! Pasta is always a favorite! And I love the combination! Slowly slowly we go back to “normal” 😊 but probably yes, no traveling for a while... Stay safe and enjoy the weekend dear Sophie! 🤗🤗

  • Mmmmmmmmm mmmmmmm do I see peas in there too? We didn't get a vacation last year either because of our house being torn apart, then this mess happens blah. Soon it will all be right as rain, back to the hustle and bustle and we will wish we were all back to the quiet days of quarantine :) :) Thanks for the recipe Sophie :) They are a blessing indeed :)

    I remember Margaret last year was a difficult year but this year is difficult of everyone on the planet. :( Let's just hope he listens to our prayers... We need to continue to think positive....Hugee hugss

    Hi Dee, It has opened up but people are still taking it slow. I had not seen my brother for over 2 months so it was nice to see him again :)
