How is everyone? I hope that everyone is hanging in there and social distancing. I had the opportunity to meet my brother, it has been about 2 months. It was great, we were not able to sit at any cafes but we were able to find an outdoor area and just hang out for about 2 hours. Of course, we held our distance and we did have fun just chatting away 🙂 It was also great to be out of the house for a few hours and see something other than walls, and computers. hehehehe Anddd the weather was just fabulous on Saturday a wonderful, warm and sunny day.
Recipe of the day wooo hoooo Mushroomssss!!! My mom grew up in a Greek village and I remember her telling me that my Grandmother and Grandfather used to go to the mountains and pick Mushrooms. Can you imagine that soooo many years ago, going out to pick Mushrooms!!?? Was that like a date thing back then hahahhah who knows hahaha (I needed to put a bit of humor). So, I gather that most do not what the Greek Gyro is butttt have you ever tried a Mushroom Gyro??? If not well here is another delicious recipe that is super easy to make. Mushrooms marinated in olive oil, oregano, and a whole bunch of other ingredients for a few hours makes them even tastier. This is a delicious recipe for those who are Vegetarians like me, Vegan, and of course for anyone who really loves to eat MUSHROOMSSS!!!
Mushroom Gyro Recipe
- 1 cup Mushrooms
- 1 ½ cups Portobello Mushrooms
- 2 tbsp Tomato Paste
- ½ cup Olive Oil
- 2 tbsp Oregano
- 2 tbsp Dill
- 3 tbsp Soy Sauce Add more for stronger taste
- 1 tsp Salt
- 1 tsp Pepper
- 6 pieces Pita Bread
- 2 tbsp Dijon Mustard
- Slice mushrooms
- In a large bowl add the mushrooms and herbs...Give it a good mix
- Add Soya Sauce
- tomato paste
- Add the oil and combine all the ingredients. Set mushrooms aside for about 1 to 2 hours.
- Place mushrooms into frying pan and saute until tender. Cut Pita bread in half and add-in the mushrooms.
