It has been snowing non stop for two days and it is so beautiful. Why is it that after it snows there is this sort of tranquility in the atmosphere? I went out for the first time today in over a week, 🙁 and had a lovely walk with Charlie…feeling better day by day. This was Charlie’s first experience with the snow, running, playing, eating snow.
I thought I would add one more soup to my Soup Series, Chickpea Soup. Simple, yet tasteful and a favorite soup in Greece after the famous Fasolada/Bean Soup.
LEMON FLAVORED CHICKPEA SOUP
Ingredients
- 1 1/2 cups of Chickpeas
- 1 large Onion diced
- 1 Garlic clove diced (optional0
- 2 Bay leaves
- 1/3 cup Olive Oil
- 1 Lemon Juice Optional
- Salt
- Pepper
Instructions
- In a large saucepan add Chickpeas and cover with water. Boil for 20 minutes or until chickpeas are soft. Toss in the onion, garlic, bayleaves and continue to simmer for 15 minutes.
- Add in Olive Oil, salt and pepper and boil for 1 hour.
- Top by adding the lemon juice for that extra flavor.
Seems to be perfect for cold and dark winter evenings 🙂
