Roasted Chicken with Honey, Apricots and Cashews

Roasted Chicken with Honey, Apricots and Cashews

Hello,

I was never a red meat lover, so I often tried to avoid it when I was younger.  I remember my mother saying that I had to eat meat because it was good for me.  (Ummm nope)  If I were to eat any type of meat it would always be white either Chicken or Turkey.  In the Greek household meat is defiitely found at least 3 times a week.   I actually have friends who eat Steak and fries daily!!???

With so many Vegetables and  different recipes from around the world why would choose to eat red meat every single day, oh and of course let’s not forget the fries…their response is always the same,  “I don’t like to eat anything else”.  I look at them with this glare of “are you seriously for real”????  I gave up trying to fight this one a long time ago, 🙂 so while I was searching through my recipes the other day I remembered this delicious fruitty – nutty forgotten recipe.  🙂

Enjoy your weekend everyone 🙂

INGREDIENTS:

1  Chicken

1/2 cup dried Apricots

1 Red Bell Pepper

1/4 cup Cashews

1/2 cup Honey

1/2 cup Olive Oil

PREPARATION:

Place Chicken into baking pan.  (I wash the Chicken and base it in Vinegar for a coupe of mintues before I cook it.)

Add in Bell Pepper, Honey, and Olive Oil.

Place into pre – heated oven at bake for 1/2 hour at 180.   Toss in the dried Apricots and Cashews and bake for another 1/2 hour.

  • Only chicken and turkey for me, too! Thanks for this recipe! Q: I don't like cashew; are almonds a good substitution?

Hi Diana, You can substitute Cashews with Raisins. :)
Thank you, Sophie. I didn't even thought about raisins!
