No Salt Turkey Slices with a side order of Veggie Skewers

Oven Baked Turkely Slices with Vegetable Souvlaki

Hello everyone,

I hope everyone is doing well and enjoyed the summer.  A lot has happened since the last time I posted which was about 2 weeks ago.  I was in Greece and expecting my husband to arrive so that we can go on a 2 week vacation.  Unfortunately, my husband had a heart attack the night he was suppose to arrive.  I can’t even express what was going on that night, I called my brother to go over to the house, he called the ambulance and from then on our lives has taken a new turn.   If it wasn’t for my brother he may not have been ……..  He has been out of the hospital for 1 1/2 weeks now and he is doing ok..  We take 20 minutes slow walks daily, and try to figure out what our next will be.

His eating habits have changed, which means there is no more salt in his diet.  I don’t use much salt when I am cooking, so omitting it completely was fine with me.  Hubby of course had to stop smoking which is truly very hard for someone who is a smoker, but I have to be honest, he really is doing a good job!!! 

Here is a qucik dish that the whole family can enjoy.  I added a whole garlic just to give it a bit of taste but then it was thrown out.  I rarely use butter but because I can’t use Olive Oil on Turkey I used a teaspoon of non salted butter.

 Light and simple Turkey and baked Veggies.. Yum Yum 🙂

INGREDIENTS:

6 Turkey Slices

1 Aubergine (chopped)

2 cups Mushrooms

1 Zuchinni (sliced)

1 Red Bell Pepper (chopped)

1 cup Cherry Tomatoes

1 whole Garlic  (optional)

1 tablespoon Non Salted  Butter (optional)

1 Lemon

8 Skewers

 

PREPARATION:

Chop and Slice all the Vegetables, and place each piece of a skewer.  Topping it off with a Cherry Tomato.

In a small baking pan add Turkey slices. 1/2 lemon juice and the garlic, I added a teaspoon of butter.

Pre-heat oven to 180 degrees and bake for 20 minutes.

    Many healing thoughts and prayers your way. I hope with each day he feels better and gets stronger. This is such a great recipe. It truly is amazing how much salt is in our food and we dont even realize. These kind of recipes are wonderful.

    I'll try this again, this was the comment I left when you first published the post (I think it may have gone to your spam folder?) "I am so sorry about your husband, that must have been such a shock coming out of the blue for both of you. I’m glad he’s home and doing a bit better. Did the doctors say anything in particular may have caused it, any kind of condition? Cutting back the salt and doing a little walk every day sound like positive changes to work into his day to day, and stopping smoking (I’m a smoker and I can empathise that this must be hard!) I did drop you an email a little while ago, after you left a comment on my blog where you mentioned what had happened; it went through your contact form on your blog, I’m not sure if you got it..? Please know I’m thinking of you both, I really do hope things can be ‘onwards and upwards’ for your hubby. I could really go for a turkey slices, maybe even as a burger (worth checking the salt content in bread, too) Those veggie skewers look amazing! Caz xxxx"

    Hi Caz,,Thank you so much for your message. I don't remember reading something similar, but the way things have been in my life I could have forgotten to respond. My husband stopped smoking the day he walked out of the hospital..It was hard for him the first 2 wks but now he is accpeting it. I am not a smoker so all I can say it what I read about stopping. He is doing slowly doing better, with these daily short walks. We still have a long way to go. Thank you so very much always know that I am thinking of you...Huge hugsss!!! Luv yaaaaaa
  • Be careful when it comes to "no salt at all", as our body needs salt, and it could be dangerous not to have any. Everything in moderation should be the rule, not abolishing it all together.     Thank you but this is the Dr order after the heart attack
    Totally understand. It's just that I had a client who asked for no salt diet, and his blood pressure went down to a dangerous level, so thought you should be aware of it. Best wishes for a speedy recovery. :)
