How is everyone? We finally had one full day of Snow! we don’t really see much snow in NL, so this was a so exciting to walk around with Charlie. He had a great time yesterday playing in the snow, running around, barking. This Snow Storm brought back some memories of a snow blizzard we had while growing up in New York, I think it was back in 1971. My dad and I walked out of the front door to encounter a huge Tunnel of Snow!!! Seriously it was a Tunnel!! I still remember to this day my jaw dropped from the site of the snow. My dad held my hand so I wouldn’t slip, poor guy he ended up slipping and hurting his back. 🙁 What an experience that was to walk through a huge TUNNEL of Snow, I was about 9 yrs old at the time.
I had planned on making Pasta for dinner, but I wasn’t in the mood for Tomato Sauce. I wanted something different, something with a sharp taste to it. I had some Blue Cheese left over from last week in the fridge, I left it out overnight so that it would soften up so that it would be easier to melt the following morning. It did work and Pasta Sauce was seriously soooo good!!
1/2 cup Blue Cheese
1 cup Heavy Cream
1 teaspoon Salt
1 teaspoon Pepper
1 teaspoon Sugar
Cut Blue Cheese into cubes.
Finely chop Parsley.
Place Blue Cheese into sauce pan, melt and add in the heavy cream, salt, pepper, parsley and sugar. Stir until sauce thickens.
Top your favorite pasta with this sauce while it is hot.
